A sweet way to stretch summer.

Late summer has its own kind of magic. The days are still warm, the evenings a little cooler, and while pumpkin spice is already sneaking in, we’re not ready to let go just yet. Around here, that means one more batch of homemade ice cream — with a twist of flavors from our farm.
This Lavender Honey Ice Cream is creamy, lightly herbal, and naturally sweetened with honey. The lavender adds an earthy, unexpected note that balances the richness of the cream, making it the perfect flavor to savor while summer lingers. We made a batch to bring to the lake, and it disappeared before we finished packing our bags.

Lavender Honey Ice Cream Recipe
Ingredients
2 cups heavy cream
1 cup whole milk
½ cup honey (plus more for drizzling)
2 tablespoons Treasured Roots culinary lavender buds
5 large egg yolks
Pinch of fine sea salt
Instructions
Heat milk, cream, half the honey, and lavender until steaming (do not boil). Remove from heat, cover, and steep for 20 minutes.
Strain out lavender. Rewarm mixture if needed.
Whisk egg yolks with remaining honey and salt. Slowly whisk in warm cream mixture.
Cook over low heat, stirring, until custard coats the back of a spoon.
Strain into a clean bowl, cool, then refrigerate at least 4 hours.
Churn in an ice cream maker (20–30 minutes) until soft-serve consistency.
Freeze 4+ hours until firm. Scoop and enjoy — with a drizzle of honey or a sprinkle of flaky salt if you like.
