A lavender twist on a roaring ‘20s classic.

The Bee’s Knees cocktail was born in the Prohibition era—a time when gin flowed quietly behind speakeasy doors, and bartenders masked its rough edges with bright citrus and sweet honey. The phrase itself, “bee’s knees,” was 1920s slang for the best of the best.
At Treasured Roots, we’ve reimagined this timeless drink with a nod to our own harvest. Our Lavender Bee’s Knees pairs the fresh, herbal brightness of our culinary lavender with the golden sweetness of honey—something our very own bees work all season to make.
The result? A drink that’s both nostalgic and fresh. It’s the clink of coupe glasses under string lights. It’s the hum of summer bees in the lavender rows. It’s sipping history with a twist from the garden.

Makes 1 cocktail
Glassware: Coupe glass
Ingredients
2 oz gin (we love Empress Indigo Gin for the soft purple hue it brings to the cocktail, but use any preferred gin - London Dry for classic crispness or a softer botanical gin for more floral notes)
3/4 oz fresh lemon juice (about half a lemon)
3/4 oz lavender honey syrup*
Ice
Garnish: Small sprig of dried lavender or a lemon twist
Lavender Honey Syrup (makes enough for 6-8 drinks)
1/2 cup water
1/2 cup honey
1 Tbsp Treasured Roots culinary lavender buds
To make syrup:
In a small saucepan, combine water, honey, and lavender.
Warm over low heat until honey fully dissolves (do not boil).
Remove from heat and let steep 20–30 minutes.
Strain to remove lavender buds. Cool before using.
To make the cocktail:
Fill a cocktail shaker with ice.
Add gin, lemon juice, and lavender honey syrup.
Shake vigorously for 15–20 seconds until chilled.
Strain into a chilled coupe glass.
Garnish with lavender sprig or lemon twist.
