Lavender Pancakes

Soft, fluffy and infused with our dried lavender buds, these pancakes offer a subtle, unexpected depth of flavor that makes breakfast feel just a little more special. Whether you're cooking for a crowd or making a quiet stack for yourself, they're a simple way to shake up your morning routine.


Top with fresh berries, a pat of butter, or your favorite syrup - it's all good.

Lavender Pancakes

INGREDIENTS

1 1/4 cups all-purpose flour

1 tablespoon sugar

1/2 tsp salt

2 tsp baking powder

1-2 tsp Treasured Roots Culinary Lavender Buds, lightly crushed*

1 cup milk

1 egg

2 tbsp melted butter (plus more for the pan)

1/2 tsp vanilla extract


INSTRUCTIONS

  1. Mix the dry ingredients. In a medium bowl, whisk together the flour, sugar, salt, baking powder, and crushed lavender buds.

  2. Mix the wet ingredients. In another bowl, whisk together the milk, egg, butter and vanilla.

  3. Combine and rest. Pour the wet ingredients into the dry, stirring until just combined (a few lumps are ok). Let the batter rest for 5-10 minutes to let the lavender flavors infuse.

  4. Cook the pancakes. Heat a buttered skillet over medium heat. Pour about 1/4 cup of batter per pancake. Cook until bubbles form on the surface and edges look set, then flip and cook another 1-2 minutes.

  5. Serve. Stack and serve warm with syrup, honey, fresh fruit or a dusting of powdered sugar (our kids also love them with whipped cream!)


*To crush lavender - rub between your fingers, grind gently with a mortar & pestle, or pulse quickly in a food processor.
