Lavender Earl Gray Shortbread Cookies

Buttery, delicate, and full of flavor - these shortbread cookies are a perfect addition to your next tea or dessert table. They pair perfectly with a cup of tea or coffee and can be made ahead so it's easy to keep some on hand!


 

INGREDIENTS

2 cups flour

1/2 tsp salt

1/4 cup sugar

1/4 cup powdered sugar

2 TBSP Treasured Roots Lavender Earl Gray Tea, ground

1 cup (2 sticks) unsalted butter

1 tsp vanilla extract

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.

  2. In a medium bowl, mix together flour, sugars, salt, and ground Treasured Roots Lavender Earl Gray tea.

  3. In a large mixing bowl, beat the softened butter and vanilla extract until creamy and smooth (2-3 min).

  4. Gradually add the dry ingredients to the butter mixture, beating on low until just combined. The dough will be crumbly at first but will come together with gentle kneading.

  5. Place dough between two sheets of parchment paper and roll out to approximately 1/4" thickness. Use a cookie cutter to cut desired shapes and transfer to the prepared baking sheets.

  6. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake.

  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to wire rack to cool completely.
