Honey Lavender Glazed Carrots

There’s something extra cozy about bringing a side dish to the table that looks as good as it tastes. These whole roasted carrots are tender, golden, and kissed with a subtle lavender honey glaze that makes them feel a little special without any fuss. Perfect for weeknights or fall gatherings.

Ingredients
2 lbs carrots with greens attached, scrubbed and trimmed
2 tbsp olive oil
2 tbsp honey
½ tsp dried Treasured Roots culinary lavender buds
1 tbsp butter
½ tsp sea salt
Freshly cracked black pepper
Instructions
Heat oven to 400°F. Line a sheet pan with parchment.
Toss carrots with olive oil, salt, and pepper, then spread in a single layer. Roast 20–25 minutes, until beginning to soften.
Meanwhile, make the glaze: gently warm honey with lavender in a small pan. Remove from heat and steep 5 minutes, then whisk in butter until smooth.
Drizzle the glaze over carrots and roast another 10–15 minutes, until tender and caramelized.
Serve warm, with a little extra glaze spooned over the top.
